Food philosophy

Let the Food Speak to you

By this, we don’t mean that the food will actually say “hello” or “eat me”. We just want to emphasise that we source our food with responsibility and that we cook using seasonal produce to ensure freshness and great taste.

Seasonality

It’s become normal to expect every type of fruit and vegetable at any time of the year, even if it’s been packed up half-ripe and flown in from the other side of the world. We think food tastes best when it’s really in season.

Our chef teams select farm-fresh, seasonal ingredients not just for their taste but also for the way they look and smell before anyone has taken a bite. New-season asparagus, roasted spring lamb, summer raspberries, winter-warmer root vegetables – what could be more delicious?

Best of Belgium

We love transparency and honesty! We are trying to source our produce from local suppliers, but sometimes it’s hard to find bananas and pineapples in Belgian farms. Most of our common fruits and veggies are from Belgium and our neighbouring EU countries.

We are very proud to say that all our meats are Belgian and we’re helping farmers with our deals. We are searching all year round for seasonal and fresh produce locally to assure the best quality and the best taste. Please remember that we use ugly veggies and fruits. Why ugly? Because most fruit and veg are treated with chemicals to ensure that they have no defaults. But we like them exactly as they should be, offered by mother nature.

Social Responsibility

We all have a responsibility to improve our daily lives for the sake of the planet. It’s a simple concept, but not always the one that’s followed. We strive to make a difference every day, whether through recycling, reducing our wastage, sourcing our food locally or promoting environmental awareness. We are green for the planet and Green Kitchen for you.

Sustainability

Knowing how our ingredients are produced is just as important as knowing where they’re produced. We like to know that they have been sustainably grown and produced, and that our suppliers stick to high welfare standards.

All of our eggs are free-range and farm-fresh, our seafood is MSC approved (that’s the Marine Stewardship Council), our coffee bean suppliers are endorsed by the Rainforest Alliance and Fairtrade, and the meat we use is sourced exclusively from Belgian farmers. Our partners are Interbio, Natura, TAO, Bionina, La Fleur du pain, Full of goodness and more…
